Apricot balls are my favourite. Something about the way the cornflakes and chopped up apricots combined with the condensed milk, make them rather moorish. They are very simple to make, but time consuming as you roll each individual ball in coconut for the finishing touches. My sister is the clever one who made these.
- 1 cup apricots diced
- 1 can condensed milk
- 1 cup cornflakes
- coconut for rolling
- Combine diced apricots, condensed milk and cornflakes.
- Roll into sticky balls, then roll in coconut to finish.
- Makes about 10-12; depending on size of ball.
To make more batches, double, triple or quadruple the recipe.
